Executive Chef - Wolfgang Poe

 
 
 
Having prepared everything from simple comfort food to extravagant multiple course feasts, Chef Wolfgang Poe comes to Vizzini Farms with distinct culinary mastery.
 
From Chattanooga, Tennessee to Ocean Springs, Mississippi, Wolfgang has made a name for himself as a top chef across the South, winning various cooking awards, including being name Chattanooga's 2009-10 Cast Iron Chef.
 
Known for his unrelenting creativity and tradition in the kitchen, Wolfgang arrived at the winery a few weeks ago as executive chef.  Most recently he served as executive chef of The Wisteria Cafe with previous executive chef positions aboard the famous Delta Queen Steamboat and The Dinner in the Diner at the world famous Chattanooga Choo Choo Hotel.
 
In his new role, Wolfgang will be creating traditional Italian Trattoria offerings with a bit of French Bistro and Southern Meat and Three for variety. “After all, you can't have a restaurant in Middle Alabama without collard greens,” he says.
 
Throughout his 20+ year career in the food industry he has worked at nearly all positions that food service has to offer, and is looking forward to the new challenge of introducing traditional Italian food to Calera and it's surroundings. “this is not the food you're going to find at the big chain restaurants,” he says. “This is the food you will find in small family run places all across Italy.” He plans to focus on purchasing as much of his ingredients locally as well, something he came to appreciate very much during his time in Chattanooga. There are also plans to produce fresh baked artisan breads and fresh pastas for sale as well.
